Anti-Inflammatory Turmeric Quinoa Bowl with Greens & Avocado

This quick, nourishing bowl is rich in anti-inflammatory nutrients, magnesium, and healthy fats that support muscle recovery and spinal health—perfect for women managing neck tension, stress, and long workdays.

 

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup baby spinach or kale (lightly steamed or sautéed)
  • ½ avocado, sliced
  • ½ cup roasted sweet potatoes (cubed, seasoned with turmeric and black pepper)
  • 2 tbsp pumpkin seeds (great for magnesium and muscle relaxation)
  • 1 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • Pinch of sea salt and ground turmeric
  • Optional: crumbled feta or a poached egg for protein

Instructions:

  1. In a bowl, layer the quinoa, spinach/kale, sweet potatoes, and avocado.
  2. Sprinkle it with pumpkin seeds, turmeric, and sea salt.
  3. Drizzle with olive oil and lemon juice.
  4. Mix gently and serve warm or cold.
