Enter slow-simmered vegetable broth with shiitake mushrooms – a humble yet powerful staple that supports digestion, hydration, immunity, and joint comfort. This isn’t just soup; it’s nourishment you can sip, cook with, and come back to again and again as part of your winter reset.

Each ingredient plays a specific role in supporting whole-body health:

Ingredients (Serves 4–6)

  • 1 tablespoon olive oil or avocado oil
  • 1 medium onion, roughly chopped
  • 3 cloves garlic, smashed
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup dried shiitake mushrooms (or 1½ cups fresh)
  • 1 small piece fresh ginger (about 1 inch), sliced
  • 1 sheet kombu or a small handful of dried seaweed (optional)
  • 1 bay leaf
  • 6–8 cups filtered water
  • Sea salt, to taste
  • Fresh parsley or thyme for finishing (optional)

 

Instructions

  1. Warm the base. In a large pot, heat the oil over medium heat. Add onion and garlic, sautéing gently for 3–4 minutes until fragrant and slightly translucent (avoid browning).
  2. Build the broth. Add carrots, celery, shiitake mushrooms, and ginger. Stir gently for 1–2 minutes to release aromas.
  3. Slow simmer. Add bay leaf, kombu (if using), and water. Bring to a gentle boil, then immediately reduce to a low simmer.
  4. Let it steep. Simmer uncovered for 45–60 minutes. The longer it simmers, the deeper the flavor and mineral extraction.
  5. Strain & season. Remove from heat and strain the broth into a clean container. Season lightly with sea salt to taste.
  6. Serve warm. Sip as-is or garnish with fresh herbs for an extra layer of freshness.
