Incredibly fresh and flavorful, I make this almost weekly during the summer. It uses fresh seasonal ingredients packed with flavor. You can easily adjust the temperature, making it mild or spicy by how much jalapeño you use. You can also add some Mediterranean flavors by adding a dash of cumin and coriander. This salsa is easily served as a salad as well, with fun modifications by adding chopped romaine, feta cheese, and pepitas.
Fresh Corn and Black Bean Salsa
1/2 red onion, diced small
4 limes, juiced
1 jalapeño diced small, and to reduce the spiciness, remove the pith and seeds
1 bunch cilantro, chopped
6 fresh ears of corn, cooked with kernels cut off the cob
6 Roma tomatoes, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1-2 cans of black beans, rinsed
- Add diced red onion to the lime juice and set aside in a small bowl.
- Bring water to a boil in a large pot. Turn off the heat and add the corn. Set a timer for 6 minutes. Then remove corn out of water and cut kernels off the cob.
- In a large bowl, toss together the diced tomatoes, bell peppers, rinsed beans, corn, cilantro, jalapeño, and onions with lime juice.
- Taste and add a sprinkle of kosher salt as necessary.
- Delicious adjustments would be adding feta cheese crumbles, chopped romaine, Pepita’s, and a dash of cumin.
- Serve with your favorite tortilla chips, or use as a delicious topping for fish tacos. Enjoy!
