Ingredients:
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fresh turmeric, grated (or 1 tsp ground turmeric)
- 2 carrots, diced
- 1 sweet potato, peeled and diced
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- ½ tsp ground cumin
- ½ tsp ground coriander
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion, garlic, ginger, and turmeric. Sauté until fragrant.
- Add carrots, sweet potato, cumin, and coriander. Stir to coat the vegetables with the spices.
