To support your body and spirit in the Year of the Snake, try this delicious and restorative soup. Packed with gut-healing miso, anti-inflammatory ginger, and grounding root vegetables, it’s a dish that embodies calm and nourishment.
Ingredients:
- 1 tablespoon sesame oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 medium carrot, sliced
- 1 cup diced daikon radish or sweet potato
- 4 cups vegetable broth
- 2 tablespoons miso paste (white or yellow)
- 1 cup chopped kale or spinach
- 1 block firm tofu, cubed (optional)
- 1 teaspoon sesame seeds (for garnish)
Instructions:
- Heat sesame oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant, about 3 minutes.
- Add carrot and daikon (or sweet potato) and cook for another 5 minutes.
- Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes, until vegetables are tender.
- In a small bowl, dissolve miso paste in a ladle of warm broth, then stir the mixture back into the pot. (Avoid boiling the soup after adding miso to preserve its probiotic benefits.)
- Add kale or spinach and tofu, cooking for 2-3 minutes until greens are wilted and tofu is heated through.
- Serve hot, garnished with sesame seeds.
