Matcha Chia Energy Pudding

Spring fatigue meets its match-a with this simple, antioxidant-rich pudding! Matcha delivers a gentle caffeine boost with calming L-theanine, while chia seeds provide slow-release energy and fiber to keep you feeling full and focused.

 

Ingredients:

  • 1 cup unsweetened almond milk (or your favorite milk)
  • 1–2 tsp ceremonial-grade matcha powder
  • 1 tbsp maple syrup or honey (optional, adjust to taste)
  • 1/2 tsp vanilla extract
  • 1/3 cup chia seeds

Instructions:

  1. In a small bowl, whisk matcha powder with a bit of warm water to make a smooth paste.
  2. In a mason jar or container, mix the matcha paste, almond milk, sweetener, and vanilla.
  3. Stir in chia seeds until evenly distributed.
  4. Let sit for 5 minutes, stir again, then refrigerate for at least 2 hours or overnight.
  5. Top with berries, coconut flakes, or nuts for extra flair!
