Healing Recipe: Warming Ginger-Miso Healing Soup

To support your body and spirit in the Year of the Snake, try this delicious and restorative soup. Packed with gut-healing miso, anti-inflammatory ginger, and grounding root vegetables, it’s a dish that embodies calm and nourishment.

 

Ingredients:
  • 1 tablespoon sesame oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium carrot, sliced
  • 1 cup diced daikon radish or sweet potato
  • 4 cups vegetable broth
  • 2 tablespoons miso paste (white or yellow)
  • 1 cup chopped kale or spinach
  • 1 block firm tofu, cubed (optional)
  • 1 teaspoon sesame seeds (for garnish)
Instructions:
  1. Heat sesame oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant, about 3 minutes.
  2. Add carrot and daikon (or sweet potato) and cook for another 5 minutes.
  3. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes, until vegetables are tender.
  4. In a small bowl, dissolve miso paste in a ladle of warm broth, then stir the mixture back into the pot. (Avoid boiling the soup after adding miso to preserve its probiotic benefits.)
  5. Add kale or spinach and tofu, cooking for 2-3 minutes until greens are wilted and tofu is heated through.
  6. Serve hot, garnished with sesame seeds.
