Ginger Date Energy Bites

Makes: 12–15 bites

Ingredients

  • 1 cup Medjool dates (pitted)
  • 1 cup rolled oats
  • ½ cup almonds
  • ¼ cup walnuts
  • 2 tbsp chia seeds
  • 2 tbsp unsweetened shredded coconut
  • 1 tbsp freshly grated ginger
  • ½ tsp cinnamon
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tbsp almond butter (optional for creamier texture)

For coating (optional):

  • Unsweetened coconut flakes
  • Crushed pistachios
  • Sesame seeds
  • Cacao powder

 

Instructions

  1. Add almonds and walnuts to a food processor and pulse until finely chopped.
  2. Add oats, chia seeds, cinnamon, ginger, coconut, vanilla, and sea salt.
  3. Blend until combined.
  4. Add dates and almond butter.
  5. Process until the mixture sticks together.
  6. Scoop about one tablespoon and roll into bite-sized balls.
  7. Roll in your preferred coating.
  8. Refrigerate for 30 minutes before serving.
  9. Store in an airtight container for up to one week in the refrigerator or freeze for up to three months.
