Lentils with Turmeric & Greens

This Lentils with Turmeric & Greens recipe is wholesome, warming, and easy to adapt to whatever greens you have on hand. Turmeric gives the dish its beautiful golden color and earthy warmth, while garlic, onion, and a touch of lemon brighten the flavors.

Think of it as a flexible everyday meal rather than a rigid recipe. Serve it on its own, spoon it over brown rice or quinoa, or pair it with a piece of whole-grain toast for a heartier dinner.

Ingredients

  • 1 cup dried green or brown lentils, rinsed
  • 3 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ½ teaspoon sea salt, or to taste
  • 3 cups chopped leafy greens such as spinach, kale, Swiss chard, or mustard greens
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley or cilantro
  • Optional: ¼ teaspoon red pepper flakes
  • Optional: 1 small carrot, diced

 

Directions

  1. Prepare the lentils. Rinse the lentils thoroughly and pick out any small stones or debris. Soaking is generally unnecessary.
  2. Build the flavor. Warm the olive oil in a medium pot over medium heat. Add the onion and carrot, if using, and sauté for about 4–5 minutes until softened.
  3. Add the aromatics. Stir in the garlic, turmeric, cumin, black pepper, and red pepper flakes. Cook for about 30 seconds, just until fragrant.
  4. Simmer the lentils. Add the rinsed lentils and vegetable broth or water. Bring to a boil, then reduce the heat and gently simmer uncovered for approximately 20–30 minutes, or until the lentils are tender but not mushy. Whole lentils generally take around 20–30 minutes to cook.
  5. Add the greens. Stir in the chopped greens during the final 3–5 minutes of cooking. Cook until tender and vibrant.
  6. Finish with brightness. Remove from the heat and stir in the lemon juice. Taste and adjust the salt, pepper, or spices as desired.
  7. Serve. Finish with fresh parsley or cilantro and serve warm.
